Ingredients:
For 6 portions
•    ¾ kilo ¡Gigantes¢ or ¡Elephantes¢ beans (large white haricot beans)
•    1 large onion, grated
•    2 carrots, cut into pieces
•    2 whole potatoes, peeled
•    2 cups of pulped tomatoes
•    1 red pepper
•    1 cup olive oil
•    ½ cup finely chopped parsley
•    1 tablespoon ground red pepper
•    Salt
•    Pepper

Preparation:
Put the beans in water to soak the previous evening. In the morning strain the beans, wash them and put them in a pan with water to boil. Add the red pepper, onion, potatoes, carrots and tomatoes. Simmer on a low heat for an hour until soft. Transfer the beans with the other ingredients into a baking dish. Add the salt, parsley, black pepper and the oil which has been heated with the ground red pepper. Make sure the beans are well covered by the liquid. Bake in a pre-warmed oven at 200°C for at least an hour. If you prefer thicker beans, mash the boiled potatoes. Don¢t hesitate to add a little water if necessary.

The beans are kept in the fridge and served as a salad or side dish.

The Tavern

Our restaurant is situated in the village square. It has been open since 1998 and in 2010 was fully renovated in the local architectural style. A warm and hospitable spot for food, coffee or drinks. You¢ll find home-cooked filo pastry pies, local “spoon sweets” – fruit preserved in syrup, regional wines and tsipouro, made in the village distillery.
